Moroccan Rice

Last week (er, maybe it was the week before) I shared with you a recipe for Moroccan Chicken with Lemon and Olives. The flavors of the chicken were so incredible that I wanted to recreate it in another dish and found the recipe for this delicious rice over at Food.com.

For this recipe I used an Instant Pot. Never heard of it? It's an electric pressure cooker and I LOVE IT!!! Seriously, you can look at the clock and realize it's after 5:00 and STILL have an amazing dinner on the table by 6:00.


Ingredients
1 cup basmati rice
1 1/2 cups chicken stock
2 tablespoons olive oil
1 yellow onion, halved and finely chopped
2/3 cup slivered almonds (I chopped mine, and it was equally amazing)
2/3 cup pine nuts
1 drop Cumin Essential Oil
1⁄4 teaspoon ground turmeric
1⁄4 teaspoon ground cinnamon
1 pinch chili powder (your taste)
1/2 cup raisins
3 drops Wild Orange Essential Oil
1⁄3 cup loosely packed coarsely chopped fresh coriander
salt
black pepper, to taste

If you don't have an instant pot, you can still make this amazing rice in one pot on your stove top.

Begin by turning your Instant Pot on saute and warm the olive oil before tossing in the onions, cooking for 5 minutes or so before adding in the almonds and pine nuts. Next add the turmeric, cinnamon, chili powder and drop of Cumin Essential Oil. Stir frequently before adding the basmati rice and chicken stock. Next add the raisins, salt, pepper and Wild Orange Essential Oil before putting the cover on your Instant Pot and pushing the button for rice.

Now go do something else. Anything. Read a book, drink a glass of wine, talk on the phone with your bestie. It doesn't matter, because the Instant Pot has taken care of everything else. Still in the bath when the rice is done cooking? No worries, friend. The Instant Pot will automatically turn itself on warm mode and your rice will be just as perfect as when it was first done cooking.
