Lemon Blueberry Smoothie

OK, for the second recipe post in a row, you might feel like I'm cheating a bit (traveling!). But again, I implore you to give it a try, it's so good! And I'll give you something a bit meatier soon, promise. This smoothie is super yummy and full of goodness. My kids loved it, and for those mornings (we do this for snacks, too) when we need to do something quick that I know they'll eat/drink, this is a perfect option.

Ingredients
12'ish ounces of organic firm, silken tofu
1 cup of plain (unflavored, unsweetened) kefir
2 bananas
1 + cups frozen blueberries
4 drops Lemon Essential Oil

Grab that Vitamix (I've had mine for at least seven years and seriously can't stop talking about it, I love it so much) and blend away. Yep, it's that easy.

*Don't sweat it if you don't have kefir. You could use a bit of cashew/coconut/almond/hemp milk, etc., but not a full cup. We also love mixing the tofu with strawberries in a smoothie (no bananas in that one, just tofu, strawberries, a smidge of honey and a bit of cashew milk).
