Pickled Beets with Fresh Mozzarella

I have not always loved beets. In fact, I still do not always love beets. But this amazing dish, to which I was introduced about 6 years ago, had me moving forward in relationship with a vegetable I'd spent the duration of my life, till then, ignoring. I've punched it up a bit with the addition of Wild Orange Essential Oil and even my kids ate it!!

This is a super easy, and yummy, side dish that would be equally appropriate for a dinner with company, or for your family on any night of the week.

Pickled Beets with Fresh Mozzarella
1 Jar Pickled Beets, preferably cubed or in balls (we're lucky enough to get the most delicious beets that are already prepared in balls- so perfect for this dish)
1 Container of Mini Fresh Mozzarella Balls (you want to go for about twice as many cheese balls as beet pieces, if you have balls of beet like I do in the above picture)
1/2 C. Orange Juice (or the juice of two oranges hand squeezed over the beets, fresh juice tastes amazing!)
4 Drops Wild Orange Essential Oil
Pinch of Himalayan Pink Sea Salt

Pour the orange juice over the beets (this can be done directly in the bowl in which you plan to serve them) and add the 4 drops of Wild Orange Essential Oil. Let sit for two hours, stirring occasionally to coat all the beets. Immediately before serving, sprinkle with salt and mix in the cheese (if you mix the cheese in too soon, it becomes hard). Voila! That's it, easy peasy, but so delicious.

Bring this dish to the table in a bowl one of your children painted and they are more likely to give it a try, perhaps surprising you and themselves in the process.

It should be noted that we never use anything but dōTERRA Essential Oils. They are Certified Pure Therapeutic Grade oils and are absolutely safe to cook with and ingest.
