Thai-Inspired Noodle Soup

Baby it's COLD outside! These are the days, friends, that I want a delicious soup to warm me from the inside out, but to be honest, I'm tired of cream-based soups. So as of late I've been trying out various vegan soups, with many happy results. Last week I tried a soup with beautiful Thai-inspired flavors, and after a few tweaks, I've landed on something I LOVE! 

Thai-Inspired Noodle Soup

- 1 can coconut milk/2 cans water
- 1 vegetable bouillon cube
- 1 teaspoon onion powder (we use Penzey's Onion Powder and it's delicious) 
1 teaspoon garlic powder (again, Penzey's is our go-to for amazing spices)
- 1 teaspoon soy sauce
- 1 teaspoon Sriracha chili sauce
- 2 x grated carrots (I like to use orange and purple carrots, for a beautiful addition of color)
- 1/2 cup chopped frozen spinach (of course you can use fresh, yum, just add LOTS more)
- Frozen shrimp- for this recipe I used about 25 pre-cooked and frozen shrimp
- 175-250 grams rice noodles (if you want a brothier soup, use fewer rice noodles, with more noodles your "soup"  
   will end up more like creamy noodles in sauce with a touch of broth)
- One toothpick swirl of Cilantro Essential Oil

This is a super-easy soup to make and more so if you keep your freezer stocked with healthy items like spinach and shrimp, and coconut milk in your pantry. My favorite store carries a frozen Thai-Vegetable mix that would be amazing in this soup. I literally add all the ingredients for this soup minus the shrimp, rice noodles, and Cilantro Essential Oil in a pot and get it nice and warm. I then add the shrimp and rice noodles. As noted above, using fewer rice noodles will yield a brothier soup, but more rice noodles will make an amazing bowl of creamy noodles with an incredible flavor and a touch of broth. Just before you're ready to pull the pot off the heat, swirl in your toothpick of Cilantro Essential Oil. Remember, Essential Oils are 70 times more potent than the herbs they come from, so a whole drop of oil will ruin your soup- even if you love Cilantro like I do.

If rice noodles aren't your thing, or if you just happen to prefer ramen noodles, know that a baked ramen noodle is an excellent substitution for rice noodles in this recipe.
