White Beans with Rosemary

OK friends, it's been a few weeks since I've posted (but since then we've visited several additional states, so....) and I thought I'd treat you to one of my favorite recipes for today's comeback. This white bean recipe is about as good as it gets, in my opinion. If you've ever been to Zöe's Kitchen and had their white beans, this may taste familiar. I fell in love with their beans and so hit the internet and found this gem of a recipe that is a pretty close knock-off of what I had at Zöe's. I tweaked it a bit, but feel free to try the original as well, it's soooo good! I make this every couple weeks and my littles have even started eating it, which makes me happier than I can tell you. I haven't tried this yet in the crockpot, but will the next time I make it (which may be tomorrow, I love it so much) and will update this post accordingly.

White Beans with Rosemary
3 Tablespoons butter (buy organic OR go for Kerry Gold, my personal favorite, which I buy at Costco)
3 cans white beans, rinsed and drained (buy organic if you can)
3/4 cup chopped onion (you can use white or red, but I used white in my last go-round and it was DELISH!)
2-4 cloves garlic (I love garlic, so personally opt for more)
2 cups chicken stock (I used Better than Bouillon Reduced Sodium Chicken Base, bought at my favorite store, COSTCO!)
salt and pepper to taste

First things first, sauté your onions and garlic (I like to press mine) in the butter until the onions are translucent. Then add the beans, chicken stock, and two drops of dōTERRA Rosemary Essential Oil. Salt and pepper to taste and then cook on low for a couple hours. You want this to be thick, not soupy, and you won't be disappointed if you wait until it's perfect. We use this mainly as a side dish, but I could easily eat it as my main meal, it's that good and satisfying.

It should be noted that we never use anything but dōTERRA Essential Oils. They are Certified Pure Therapeutic Grade oils and absolutely safe to ingest and cook with (and the rosemary smells AMAZING!!!).
